By presenting actual studies, Nutritional Biochemistry is an exciting and unique book that allows students to receive a hands-on perspective of the field. Each case study either leads to a subsequent discovery or enables an understanding of the physiologic mechanisms of action of various nutrition-related processes. This real-world approach allows students to come away with a realistically informed view of the basis for much of our understanding of nutritional biochemistry.

Includes bibliographical references and index.

CHOICE Review

Physiology, biochemistry, and nutrition come together in Brody's perfect book on nutritional biochemistry (1st ed., 1994). It is thorough and deep; however, the explanations make the difficult concepts palatable and more understandable. The explanations are illustrated with carefully selected reactions, diagrams, and structures and examples. Extras take this very fine, fully referenced, and up-to-date work beyond the ordinary. For example, the last chapter on diet and cancer offers an excellent background for anyone making a foray into that field. Recommended as a resource for an advanced level nutritional biochemistry course and for just about anyone needing a ready reference on the science of nutrition. Upper-division undergraduates through professionals. J. M. Jones; College of St. Catherine
